vegetarian meatballs
Here is a recipe for vegetarian meatballs:
Ingredients:
- 1 head cauliflower, chopped
- 1 cup cooked brown rice
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 egg, beaten
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- Preheat oven to 400 degrees F (200 degrees C).
- In a food processor, pulse the cauliflower until it is finely chopped.
- In a large bowl, combine the cauliflower, brown rice, bread crumbs, Parmesan cheese, onion, garlic, egg, Italian seasoning, salt, and pepper. Mix well.
- Roll the mixture into small balls (about 1 inch in diameter).
- Place the meatballs on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, or until the meatballs are cooked through.
- Serve hot with your favorite sauce.
Here are some additional tips for making vegetarian meatballs:
- You can use any type of cooked rice in this recipe. I like to use brown rice for added nutrients, but white rice will work just as well.
- If you don't have bread crumbs, you can use cracker crumbs or even oats.
- You can add other vegetables to the meatballs, such as carrots, zucchini, or bell peppers.
- You can also add other seasonings to the meatballs, such as dried oregano, basil, or thyme.
- Serve the meatballs with your favorite sauce, such as marinara sauce, spaghetti sauce, or Alfredo sauce.
Enjoy!
