vegetarian meatballs



Here is a recipe for vegetarian meatballs:

Ingredients:

  • 1 head cauliflower, chopped
  • 1 cup cooked brown rice
  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 egg, beaten
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a food processor, pulse the cauliflower until it is finely chopped.
  3. In a large bowl, combine the cauliflower, brown rice, bread crumbs, Parmesan cheese, onion, garlic, egg, Italian seasoning, salt, and pepper. Mix well.
  4. Roll the mixture into small balls (about 1 inch in diameter).
  5. Place the meatballs on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes, or until the meatballs are cooked through.
  7. Serve hot with your favorite sauce.

Here are some additional tips for making vegetarian meatballs:

  • You can use any type of cooked rice in this recipe. I like to use brown rice for added nutrients, but white rice will work just as well.
  • If you don't have bread crumbs, you can use cracker crumbs or even oats.
  • You can add other vegetables to the meatballs, such as carrots, zucchini, or bell peppers.
  • You can also add other seasonings to the meatballs, such as dried oregano, basil, or thyme.
  • Serve the meatballs with your favorite sauce, such as marinara sauce, spaghetti sauce, or Alfredo sauce.
